Watermelon Jello Shots
While we often shy away from Jello shots (goodbye college), we couldn’t resist these cute watermelon ones! The best part? You can pass them off as your daily dose of fruit. We recommend preparing them side-by-side with these perfect-for-groups recipes, sitting back and enjoying with friends.
Watermelon Jello Shots Recipe
Makes 40 shots
- 10 limes, pulp removed
- 1 box red Jello
- 1 cup boiling water
- 1 cup cold vodka
- Mini chocolate chips or black sprinkles if desired
Cut limes in half, and using a paring knife carefully remove the pulp from the rind. Once you have removed all the fruit from inside of the rind, arrange limes, cut side up, on a tray.
In a small bowl, mix 1 cup of boiling water to the Jello powder, and stir for 2 minutes until fully dissolved. Add 1 cup of cold vodka. Carefully pour mixture into lime halves, filling all the way to the top. Chill in the fridge for at least 2 hours, until the Jello is set.
Using a sharp knife, carefully cut each lime half in half again. We made “seedless” watermelon shots, but you can stick in mini chocolate chips or black sprinkles, if desired, for seeds!
