The Best Recipe for Whole-Grain Pancakes

Whole Grain Pancakes Recipe
- 3 eggs
- 2 cups kefir or buttermilk
- ¼ cup oil
- 2 teaspoons vanilla
- 2 tablespoons sugar
- pinch of salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 cups whole grain flour
- ½ cup freshly ground flaxseed
- oil for cooking
Mix wet ingredients in a medium sized bowl. Whisk dry ingredients in a large bowl, then slowly incorporate liquids, mixing well. Heat a large skillet or griddle on medium-high with a little oil and pour ¼ cup batter to form each pancake. Cook until small bubbles form, and then flip, cooking until done through. Serve warm with fresh berries & maple syrup.

Whole Grain Flour Mix
- 6 cups Prairie Gold winter white wheat berries
- 1 cup barley
- 1 cup oats groats or flakes
- 1 cup brown rice
- 1 cup whole corn
- 1 cup millet
Mix grains together in a large bowl, then process through grain mill. Store in the fridge until use.
