Strawberry Greek Yogurt Parfait

  • 1 6-ounce 2% plain Greek yogurt
  • ¼ teaspoon pure vanilla extract
  • 1 cup fresh strawberries
  • 1 teaspoon stevia powder, divided
  • 1 tablespoon cacao nibs

Stir together Greek yogurt, vanilla, and half of the stevia powder. In a blender or food processor, puree strawberries and remaining ½ teaspoon stevia powder. In a small glass, layer yogurt with strawberry puree. Top with cocoa nibs and dig in!
