This spiced Moroccan-inspired couscous recipe is great for pairing with a seared steak or roasted chicken! We love the sweetness that the raisins and carrots add, making this dish a delicious hit!
Moroccan Carrot-Raisin Couscous
- 2 cups shredded carrots
- ½ cup raisins
- 1 cup couscous
- ¼ teaspoon ground cumin
- ¼ teaspoon ground coriander
- ¼ teaspoon sweet paprika
- ¼ teaspoon cinnamon
- 1 teaspoon olive oil
- Salt and pepper
In a small pot, bring 2¼ cups water with ¼ teaspoon salt to a boil over high heat. Meanwhile, in a medium bowl, combine shredded carrots, raisins, and couscous. When water is boiling, add couscous mixture to pot and immediately cover with lid. Allow to stand, covered, until all water is absorbed, about 10 minutes.
Uncover couscous and ﬂuﬀ with a fork. Stir in spices and olive oil. Taste and add salt and pepper as needed.
