The Burger, Shake Shack Style
While living in Paris for culinary school, I often had cravings for specific foods from home: New York City. One spring afternoon, my classmate Ali and I had Shake Shack on our minds. A bistro wouldn’t cut it – we needed the real deal Shack Burger with American cheese and Shack sauce. Luckily, we found an approximated quick recipe on seriouseats.com for the “Fake Shack.”
Ingredients for the Sauce
¼ cup mayonnaise
½ tablespoon ketchup
½ tablespoon yellow mustard
2 slices kosher dill pickle
1/8 teaspoon garlic powder
1/8 teaspoon paprika
pinch cayenne pepper
Ingredients for the Burger
8 ounces ground beef: 4 ounces sirloin, 2 ounces chuck, 2 ounces brisket
2 tablespoons butter, melted
2 potato buns (preferably Martin’s)
2 leaves lettuce
4 slices plum tomatoes
½ teaspoon vegetable oil
2 slices American cheese
First, combine all ingredients for the shack sauce in a blender and blend until smooth. Then, form the ground beef into two disks.
Drizzle vegetable oil into a heavy-bottomed skillet or pan and place over medium-high heat until just smoking. Season the burgers with salt and pepper and place in the pan. Using a flat spatula, press down on the burgers. Cook until a crust has formed on the bottom, about 2 minutes. Flip burgers over and top each with a slice of American cheese. Cook until the cheese has melted, about 1 minute more.
While the burgers are cooking, brush the inside of the buns with butter and then place under the broiler until lightly golden brown, about 1 minute.
Place the burgers on the buns and top with sliced tomato, lettuce, and shack sauce. (If you or your guests are anything like me, serve your burgers with additional shack sauce on the side and ketchup!).
