Pomegranate-Cucumber Salad with Feta

Removing pomegranate seeds can be time consuming, but if you don’t want to take that extra step you can find them de-seeded in many grocery stores.

Pomegranate-Cucumber Salad Recipe

  • ½ cucumber, halved and cut into slices
  • 2 scallions, chopped
  • ¼ cup cilantro, chopped
  • ½ cup pomegranate seeds
  • 1 lime, juiced
  • ½ cup crumbled feta cheese
  • 1 tablespoon olive oil
  • salt and pepper

Rinse cucumber, scallions, and cilantro. Cut the cucumber in half lengthwise, scoop out the seeds, and cut into ¼-inch slices. Chop scallions and cilantro. Combine the cucumbers, scallions, cilantro, pomegranate seeds, lime juice, 1 tablespoon olive oil, and a pinch of salt. Top with crumbled feta and black pepper.
