Summer ’tis the season for firing up the grill, and steak is making its way onto everyone’s grocery list. For the best steak, though, you don’t always have to be at the grill. We love this easy recipe from Andrew Carmellini of New York’s Locanda Verde on Esquire.com for how to make the Perfect Roasted Steak.

Perfectly Roasted Steak Recipe

Yield: 4 servings

  • 4 portions of your favorite cut of steak
  • Oil
  • Kosher salt
  • Pepper

Preheat oven to 450° F degrees. Heat a cast-iron skillet over medium-high heat. Add oil until almost smoking.

In the meantime, season steaks with a generous amount of salt and pepper. Sear steaks for 2 ½ to 3 minute per side. Using tongs, rotate steaks to sear the edges (this locks in the flavor).

Place steak on a baking sheet and roast in oven until medium-rare, 8 minutes each side. The internal temperature should range between 115° and 125° degrees). Remove pan from oven and allow steak to rest for 15 minutes. Then, slice and enjoy!
