No-Bake Pumpkin Energy Bites

‘Tis the season… for everything pumpkin! When we came across this recipe on Gimme Some Oven for No-Bake Pumpkin Energy Bites, it was immediately put into the fall snack recipe queue and filed under “must try.” These are the perfect little midday snack when you are craving something sweet and fall-y! Freshly ground nutmeg adds that perfect pumpkin pie flavor and the dates make these energy bites naturally sweet. If you don’t care for the chewiness of raw oats, we suggest simply toasting them with the coconut and pepitas.


No Bake Pumpkin Energy Bites

  • ¾ cup Medjool dates
  • 3 tablespoons honey
  • ¼ cup + 2 tablespoons pumpkin puree
  • 1 teaspoon molasses
  • 1 teaspoon cinnamon
  • ¼ teaspoon fresh ginger
  • ¼ teaspoon freshly ground nutmeg
  • Pinch of salt
  • 1 cup dry oats
  • 1 cup toasted coconut flakes
  • 1 cup toasted pepitas
  • ¼ cup dried cranberries

In a blender or food processor combine dates, honey, pumpkin, molasses and spices until smooth. In a medium-sized bowl combine oats, coconut and pepitas. Stir together oats and date purée until well combined, then chill in refrigerator for 15-20 minutes. Using your hands, shape oat mixture into 1″ balls and place on wax paper. Store in the fridge.
