We love Mediterranean food both for its bold flavors and spices and for its simplicity. This recipe includes two of Chef Suzanne Lehrer‘s favorite go-to tricks for a quick and delicious weeknight meal: a simple spice rub, from warm peppery spices in her cabinet, and a fast yogurt sauce, enhanced with the same spice rub, tangy shallots, and a dash of olive oil.
