How to Make Seared Hanger Steak with Japanese Ponzu Sauce and Basil Rice
You already know how to make a juicy steak, but you might be growing tired of the same old condiments. For this steak recipe, leave the barbecue and Worcestershire sauces behind and go get yourself some ponzu—a tart, citrusy Japanese sauce made with lemon juice, rice vinegar, soy sauce, and more.
You’ll be searing your steak to whatever level of doneness you prefer. (We like a juicy medium-rare.) Word to the wise: Let the meat rest for a couple of minutes between cooking and slicing. This allows the juices to set into the steak, rather than ending up all over your cutting board as you slice. Enjoy!

¾ cup wild rice
⅙ bunch Thai basil
½ pound carrots
2 sprigs thyme
1 sprig rosemary
10 ounces hanger steak
¼ cup shredded daikon radish
¼ cup ponzu
1. Cook Rice
In a small pot, bring wild rice, 1¼ cups water, and a pinch salt to a boil over high heat. Stir once, cover, reduce heat to low, and cook for 12 minutes. Remove pot from heat and allow to stand, still covered, for 10 minutes. Uncover, fluff with a fork, and set aside.
2. Prepare Ingredients
While rice cooks, rinse Thai basil and thinly slice leaves, discarding stems. Peel carrots and grate on a box grater or mince as finely as possible. Chop thyme and rosemary leaves, discarding stems. Rinse steak and pat dry with paper towel.
3. Make Ponzu Sauce
In a medium bowl, whisk together ponzu and 2 teaspoons vegetable oil. Add carrots and shredded daikon radish, and stir to combine. Taste and add salt and pepper as needed.
4. Sear Steak
Heat 1 teaspoon vegetable oil in a medium pan over medium heat. Season steak on both sides with thyme, rosemary, salt, and pepper. When oil is just smoking, add steak and sear until browned on outside and medium rare, 4-5 minutes per side. Remove and set aside to rest for about 5 minutes, then thinly slice against the grain.
5. Season Rice
Stir Thai basil into rice. Taste and add salt and pepper as needed.
6. Plate Steak
Divide rice evenly between 2 plates and top with steak. Spoon ponzu sauce over steak and serve.
