How to Clean Portobello Mushrooms

First, wipe the caps of the mushrooms clean with a damp paper towel. Mushrooms can have a bit of dirt on them, however it’s important not to get them too wet. They absorb water very easily, so washing them in the sink can make them waterlogged (and therefore soggy when cooked). Wiping them with a damp cloth gets the dirt off, while keeping mushrooms dry!

Next, cut off the stem. Mushrooms stems can be tough and a bit too woody in flavor. In this case it’s important to remove them so the mushroom can be stuffed. If you choose to eat the stems, it’s best to chop them up first.

Place the mushroom on it’s rounded side and scoop out the gills with a spoon. While the gills are edible, removing them creates as nice cup for the mushroom filling.

Continue to scoop until the inside of the Portobello is completely clean.

Now it’s ready for stuffing!
