Grilled Chicken Tostadas
No matter how many restaurants you try, it can seem nearly impossible to satisfy a craving for authentic Mexican food. Luckily, we stumbled on this great, easy recipe for Grilled Chicken Tostadas from the Food Network and the problem was solved.
Grilled Chicken Tostadas Recipe
Yield: 4 servings
- ¼ cup lime juice, freshly squeezed
- 2 garlic cloves, sliced
- 1 chipotle in adobo sauce, coarsely chopped
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- Cooking spray
- 4 8” flour tortillas
- 1 pound tomatillos, removed from husk and rinsed
- 1 tablespoon olive oil
- 2 cups romaine lettuce, shredded
- 2 ounces queso fresco, crumbled
- Kosher salt
- Onion, chopped
- Cilantro, chopped
- Lime wedges
Combine lime juice, garlic and chipotle chilies in a bowl. Season to taste. Add the chicken and toss to coat, then refrigerate for 2 hours. Remove the chicken, thread on skewers, and lightly coat with cooking spray.
Preheat the grill to medium. Lightly coat tortillas with cooking spray and toast on grill, approximately 1 to 2 minutes.
In the meantime, add chicken and whole tomatillos to the grill and cook until tomatillos are charred and the chicken is cooked through, approximately 4 to 6 minutes. Remove chicken from the skewers.
Chop tomatillos and toss with olive oil and salt to taste. Plate tortillas and top with lettuce, tomatillos, chicken, and queso fresco. Garnish with onion, cilantro and lime.
