Greek Lamb Burgers with Cucumber-Tomato Salad
This unique burger recipe is a perfect summer meal! The easy to make cucumber salad keeps it light and fresh, and the feta cheese with the homemade pickled onion adds little extra saltiness that compliments the lamb perfectly.
Greek Lamb Burgers with Pickled Red Onions and Chopped Cucumber Salad
Yield: 2 Servings
Time: 20 Minutes
- 1 small red onion, thinly sliced
- 1 large cucumber, peeled, seeded, and chopped
- 1 cup cherry tomatoes, halved
- ¼ cup chopped pitted Kalamata olives
- 1 small garlic clove, minced
- 1 tablespoon freshly squeezed lemon juice
- ¼ cup crumbled feta cheese
- ¼ cup mayonnaise
- 1 teaspoon ground cumin
- 2/3 pound ground lamb
- 2 hamburger buns
- 2 tablespoons red wine vinegar
- 3 tablespoons olive oil
- salt and pepper
1. Pickle Onions
Put the red onions in a small saucepan over high heat. Add water to cover, the vinegar, and a pinch of salt and pepper. When the water comes to a boil, turn off heat and set the saucepan aside.
2. Mix Salad
In a medium bowl combine the cucumbers, tomatoes, olives, garlic, lemon juice, 2 tablespoons of the olive oil, and a sprinkle of salt and pepper. Toss to coat. In a small bowl, combine the mayonnaise and feta, mashing the feta a bit with the back of the fork until you have a creamy spread.
3. Make Burgers
Mix the cumin into the lamb, handling the meat as little as possible, and form it into two patties. Sprinkle both sides generously with salt and pepper, and make a small indent in the top of each burger with your thumb (this helps the burgers come out flat instead of spherical). Put a heavy-bottomed skillet over medium-high heat. When the pan is hot add the remaining tablespoon of olive oil, then the burgers. Cook, undisturbed, until a nice crust forms on the bottom and the burgers release easily from the skillet, about 3 minutes. Flip, and cook for another 3 minutes for medium rare. If you like your burgers medium or well done, cook for another minute or two on each side.
4. Assemble Burgers
While the burgers cook, strain the onions from liquid and toast the buns. Spread the feta mayo onto the toasted buns, top with the onions and burgers. Serve with the cucumber salad on the side.
