Frozen Banana Pops, Just in Time for Arrested Development

With the long-awaited new season of Arrested Development coming up, we’ve got frozen banana pops on the brain! These ones aren’t from Bluth’s Frozen Banana Stand, but they’re just as good.  Not only are they a Bluth family favorite, but this simple dessert is also gluten-free, dairy-free, and relatively healthy!

Frozen Banana Pops Recipe

Yield: 9 servings

What you’ll need:

Popsicle sticks
Parchment or wax paper
Baking sheet
Small pot
Bowl

Ingredients

3          bananas, peeled and cut in 3
6          ounces good quality dark chocolate, chopped
1          cup salted peanuts, finely chopped
9          Popsicle sticks

Peel and cut the bananas into 3 sections, and insert a Popsicle stick into each piece. Place on a baking sheet lined with parchment paper. Freeze for at least 15 minutes — up to 3 hours.

Meanwhile, chop the peanuts and place them on a plate.

Place the chopped chocolate in a bowl over a pot of simmering water. The water shouldn’t be touching the bottom of the bowl; the steam alone will help melt the chocolate. Stir the chocolate constantly over the steam until it is completely melted and smooth. Pour the chocolate in a tall glass.

Remove the bananas from the freezer. Carefully dip each banana into the chocolate so that it is completely covered. Then roll the chocolate covered banana in the chopped peanuts. Place the banana back on the parchment paper-lined baking sheet. Repeat with each banana piece and place the baking sheet in the freezer.

Freeze for 30 minutes. These will last for 2 weeks in the freezer.
