Delicious Cucumber, Radish
& Farro Salad
Hearty farro mixed with cucumber and radish is an easy to make side salad that’s not only a healthy recipe, but tasty!
Farro Cucumber-Radish Salad
- ¾ cup farro
- ½ cucumber, chopped
- ¾ cup radishes, diced
- ½ red onion, chopped
- 2 tablespoons parsley, chopped
- 2 tablespoons olive oil
- 1 lemon, juiced
- salt and pepper
Bring a medium pot of water to a boil. Add the farro and cook for 10 minutes. While the farro is cooking, rinse the cucumber, radishes and parsley. Chop the cucumber, radishes, parsley and red onion. Add to the farro and toss with lemon juice, 2 tablespoons olive oil, salt and pepper.
