Corn Salsa Recipe
- ½ lime, zested and juiced
- ¼ teaspoon chipotle chile powder
- ¼ teaspoon salt
- ¼ pepper
- 1 tablespoon olive oil
- 1 poblano pepper, rinsed and diced
- 1 red bell pepper, diced
- 1 small red onion, diced
- 1 cup corn
- ½ cup black beans, drained
- salt and pepper
1. Make Vinaigrette
Combine lime zest, lime juice, chipotle chile powder, salt and pepper in a small bowl. Slowly add 1 tablespoon olive oil while quickly whisking until it gets thick.
2. Combine Salsa
Combine corn, diced poblano, diced bell pepper, diced red onion, and black beans. Drizzle with vinaigrette. Taste and add salt and pepper as needed.
