How to Make Chicken Pad Thai Burgers
Sometimes it can be tough to choose between burgers and noodles. We get it. In our Chicken Pad Thai Burger recipe, we solve this conundrum by combining two of your restaurant favorites in one crazy good dish: all the beloved flavorings of pad Thai take burger form. Sweet Asian shishito peppers are charred to perfection and served alongside for some smoky flavor. Watch the video above and take a look at the instructions below on how to make this epic mashup.
Gochujang is spicy, so use only as much as desired depending on your spice preference.
When frying the shishitos, stand back from the stove in case hot oil splatters.
2 tablespoons soy sauce
1½ tablespoons light brown sugar
½ teaspoon tamarind paste
2 tablespoons peanut butter
2 teaspoons gochujang
12 ounces ground chicken
2 tablespoons sesame oil, divided
4 ounces shishito peppers
¼ teaspoon coarse Maldon sea salt
2 hamburger buns
2 tablespoons peanuts
¼ cup shredded carrots
¼ cup bean sprouts
6″ small pot
10″ medium nonstick pan with lid
¼ cup water
1. Cook Peanut Sauce
In a small pot over medium-high heat, whisk together soy sauce, brown sugar, tamarind paste, peanut butter, as much gochujang as desired, and ¼ cup warm water (see Recipe Tip). Cook until beginning to bubble, about 1 minute. Remove pot from heat and set aside.
2. Form Burgers
Pat chicken dry with paper towel and place in a medium bowl. Add 2 tablespoons peanut sauce, ¼ teaspoon kosher salt, and pepper as desired. Using your hands, mix well. Divide mixture evenly and form into 2 patties, about 1-inch thick.
3. Char Shishitos
Heat ½ of sesame oil in a medium nonstick pan over medium-high heat. Rinse shishitos and pat dry with paper towel. When oil is shimmering, add shishitos to pan and cook, flipping occasionally, until charred in spots, about 4 minutes. Transfer to a plate and sprinkle over Maldon sea salt.
4. Sear Burgers
Wipe pan from shishitos clean and add remaining sesame oil over medium-high heat. When oil is shimmering, add burgers and sear until browned on bottom, 6-7 minutes. Flip, cover pan, and sear until cooked through, about 5 minutes more. Transfer to a plate.
5. Toast Buns
Halve buns crosswise. Wipe pan from burgers clean, add buns cut-side down over medium heat, and toast until light golden, 2-3 minutes. Meanwhile, roughly chop peanuts.
6. Plate Chicken Pad Thai Burgers
Top bun bottoms with burgers. Dollop over remaining peanut sauce, then add everything: carrots, bean sprouts, and peanuts. Finish with bun tops and serve with charred shishitos alongside. Enjoy your epic mashup.
